Giant Fluffy Pancakes


  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tbsp granulated sugar
  • 1/2 tsp salt
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tbsp melted butter
  • 1 tsp vanilla extract
  • Toppings: Maple syrup, butter, berries, etc.


  1. Whisk Dry: Combine flour, baking powder, sugar, and salt in a bowl.
  2. Whisk Wet: In a separate bowl, beat together milk, egg, melted butter, and vanilla extract.
  3. Combine: Add wet ingredients to dry, whisk until just combined (a few lumps are okay – don't overmix).
  4. Griddle Time: Preheat griddle to medium heat. Grease lightly if needed.
  5. Pour & Cook: Pour batter in 1/2 cup portions onto the griddle. Cook until bubbles appear, and the edges look set (2-3 minutes). Flip and cook through (another 1-2 minutes).
  6. Serve: Stack those fluffy pancakes and enjoy with your favorite toppings.
