Grilled Chicken Fajitas


  • 1 lb boneless, skinless chicken breasts, sliced into thin strips
  • 1 large bell pepper (any color), sliced
  • 1 onion, sliced
  • 2 tbsp fajita seasoning (store-bought or homemade)
  • 2 tbsp olive oil
  • 8-12 small flour tortillas
  • Toppings: Sour cream, salsa, guacamole, shredded cheese


  1. Marinade: Combine the chicken with olive oil and fajita seasoning, let rest for 15 minutes or up to overnight.
  2. Heat: Preheat your griddle to medium-high heat.
  3. Sizzle Time: Add chicken to the hot griddle and cook for about 3-4 minutes per side, until cooked through and slightly charred.
  4. Add Veggies: Push the chicken to one side and add sliced peppers and onions to the griddle. Cook, stirring, until softened, about 4-5 minutes.
  5. Combine: Toss the cooked chicken together with the vegetables.
  6. Warm the tortillas: Briefly heat tortillas on the griddle until warmed.
  7. Serve: Build your fajitas with the chicken/veggie mix and your favorite toppings.
