Vegetable Stir-fry


  • 2 tbsp vegetable oil
  • 1 cup sliced onions
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers (any color)
  • 1 cup sliced carrots
  • 1/4 cup soy sauce
  • 1 tbsp sesame oil
  • 1 tsp grated fresh ginger
  • 2 cloves garlic, minced
  • Cooked rice or noodles (for serving, optional)


  1. Heat the oil: In a large wok or directly on your griddle, heat the vegetable oil over high heat.
  2. Stir-fry veggies: Add onions and cook for 1 minute. Add broccoli, peppers, and carrots. Cook, stirring frequently, for 3-5 minutes, or until vegetables are crisp-tender.
  3. Sauce it up: In a small bowl, whisk together soy sauce, sesame oil, ginger, and garlic.
  4. Combine and cook: Push vegetables aside on the griddle. Add sauce mixture and cook for 30 seconds, stirring constantly. Combine with vegetables and cook for another minute.
  5. Serve: Enjoy immediately over cooked rice or noodles, if desired.
