Ingredients
- 2.5 oz restaurant-style corn tortilla chips
- ⅔ cup shredded Mexican-blend cheese
- 6 tbsp canned black beans drained and rinsed
- 1 small jalapeno diced
- 1 small roma tomato diced
- ¼ small white onion diced
Instructions
- Preheat oven to 350 degrees.
- Place a single layer of tortilla chips (about half of them) in the bottom of a cast iron griddle. Top with 1/3 cup of the shredded cheese.
- Add the remaining tortilla chips, then top with the remaining cheese and black beans. Finally, top with the jalapeno, tomato, and onion.
- Bake for 10 minutes, or until cheese is melted and gooey. Serve immediately.
