Cast Iron Nachos

Ingredients

  • 2.5 oz restaurant-style corn tortilla chips
  • ⅔ cup shredded Mexican-blend cheese
  • 6 tbsp canned black beans drained and rinsed
  • 1 small jalapeno diced
  • 1 small roma tomato diced
  • ¼ small white onion diced

Instructions

  • Preheat oven to 350 degrees.
  • Place a single layer of tortilla chips (about half of them) in the bottom of a cast iron griddle. Top with 1/3 cup of the shredded cheese.
  • Add the remaining tortilla chips, then top with the remaining cheese and black beans. Finally, top with the jalapeno, tomato, and onion.
  • Bake for 10 minutes, or until cheese is melted and gooey. Serve immediately.
