Chicken Breast with Vegetables

Ingredients

  • 2 Large Chicken Breasts 
  • 4 Large potatoes, quartered 
  • 3 large carrots, cut into large pieces 
  • 2-3 stalks of fresh herbs, like thyme or rosemary
  • 2 tsp garlic powder
  • Salt and pepper 
  • Olive oil 

Instructions

  • Preheat the oven to 375F. Meanwhile heat your griddle over medium heat and sear the chicken breasts on both sides for about a minute or two in olive oil. 
  • In a mixing bowl toss the potatoes, carrots, herbs, garlic powder, salt and pepper, and olive oil. Transfer to the griddle next to the chicken and move to the oven. Roast for about 20 minutes or until the vegetables are tender and the chicken is cooked through. 
  • Transfer the chicken and the vegetables to a platter and drizzle with the juice left in the griddle. Serve immediately.
