1 1/2 cups all-purpose flour

1 tbsp granulated sugar

1/2 tsp salt

1 1/4 cups milk

1 large egg

3 tbsp melted butter

1 tsp vanilla extract

Instructions:

Whisk Dry: Combine flour, baking powder, sugar, and salt in a bowl.

Whisk Wet: In a separate bowl, beat together milk, egg, melted butter, and vanilla extract.

Combine: Add wet ingredients to dry, whisk until just combined (a few lumps are okay – don't overmix).

Griddle Time: Preheat griddle to medium heat. Grease lightly if needed.

Pour & Cook: Pour batter in 1/2 cup portions onto the griddle. Cook until bubbles appear, and the edges look set (2-3 minutes). Flip and cook through (another 1-2 minutes).
