1 cup sliced bell peppers (any color)

1 cup sliced carrots

1/4 cup soy sauce

1 tbsp sesame oil

1 tsp grated fresh ginger

2 cloves garlic, minced

Cooked rice or noodles (for serving, optional)
Instructions:

Heat the oil: In a large wok or directly on your griddle, heat the vegetable oil over high heat.

Stir-fry veggies: Add onions and cook for 1 minute. Add broccoli, peppers, and carrots. Cook, stirring frequently, for 3-5 minutes, or until vegetables are crisp-tender.

Sauce it up: In a small bowl, whisk together soy sauce, sesame oil, ginger, and garlic.

Combine and cook: Push vegetables aside on the griddle. Add sauce mixture and cook for 30 seconds, stirring constantly. Combine with vegetables and cook for another minute.
