Quesadillas

Ingredients:
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup cooked, shredded chicken (or any pre-cooked meat, beans, or roasted vegetables)
  • 1/2 cup salsa
  • 1/4 cup sour cream
Instructions
  1. Prep work: If using chicken or other meat, cook and shred before assembly.
  2. Griddle ready: Preheat your griddle to medium heat.
  3. Build it: Layer half a tortilla with cheese, your chosen filling, and a bit more cheese. Fold the tortilla in half to create a half-moon shape.
  4. Grill time: Place the quesadilla on the hot griddle. Cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is fully melted.
  5. Repeat: Make more quesadillas with the remaining ingredients.
  6. Serve: Cut quesadillas into wedges and serve with salsa and sour cream.
