Peach Berry Cobbler

Ingredients

  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 2 cups sliced peeled fresh peaches
  • 1 cup blueberries
  • 1 pack biscuits 
  • Ice cream or yogurt for serving 


Instructions

  • Preheat oven to 375°. In a cast iron skillet, combine the first 5 ingredients. Bring to a boil. Cook and stir until thickened, 1-2 minutes; stir in fruit. 
  • Arrange the biscuits on top of the fruit mixture and put them in the oven. 
  • Bake for about 20 minutes or until the fruit mixture is bubbly and the biscuits are cooked through and fluffy.
  • Remove from the oven and serve with ice cream or yogurt on top.
